當一位廚師在吃一個精心烤制的火雞腿時，她不會不加咀嚼一口嚥下。

她會嗅聞，會凝視，並加以細細品嚐。

她需要知道為什麼火雞腿是完美的。

當殘留的肉香味在她的味蕾上滋長與蔓延時，她閉上眼睛。

她在思考腿中脂肪的比例，食鹽的用量，烤箱的溫度，烘製的時間，甚至那隻雞的年齡與性別。

她曾製作並食用過上千只的火雞腿。

每一次烤制時，各式各樣的製法浮上腦海。

她選擇了最喜歡的那一個，繼而添入源於自身創意及多年實踐經驗而得出的秘密配方。

一位作家亦是如此。

“She smells it。She stares into it。

She savours it by nibbles。

She needs to know why it is perfect。

When the lingering taste thrives on her tastebud，she closes her eyes，

wondering about the ratio of the fat，the amount of the salt，the temperature of the oven，the hour of roasting，and even the age and sex of the chicken。”
